It’s a big one, boys. Bloated on lasagna and Swiss Rolls, we smoke the Man-O-War Ruination Warhorse, and talk about weed stuff, fee stuff, football stuff, and Joe Biden stuff. Also, has Nicolas Cage always been crazy?

Extra stuff: I was in a super nerded-out football pick’em league at work (engineers and physicists make for a ridiculously complicated spreadsheet), and every week throughout the season, the loser of the week got an award. Here is mine for Week 13.

005 – DON’T BE GAY, BEILSKI

After a dinner of breakfast (brenner?); chorizo omelettes and sweet cream toast, we fire up the A. Turrent Triple Play Puro Maduro. Childhood delinquency, government shenanigans, more liars, and Beilski makes a mess all over the floor.

004 – DON’T FUSS WITH ME

We finish off the pre-show dinner with Twinkies, and light up the Camacho Ecuador. The biggest of big football games,  terrible commercials, lying liars, and unqualified criticism.

MEXICAN MEATLOAF

Preheat oven to 350°
2 lbs ground beef
1 lb sausage
1 small chopped onion
1 clove minced garlic
2 tbsp olive oil
2 tbsp taco seasoning
2 eggs
1 bread heel, crumbled
1 cup salsa (for top of loaf)

Saute onion and garlic in olive oil. Combine with remaining ingredients (reserving salsa for top). Hands work best for mixing well. Form into loaf and place in greased baking dish, top with salsa, cover and bake for 1 hour. Remove cover and bake for additional 1/2 hour. Remove from dish to platter and let rest 15 minutes. Serves 4 – 6

We sliced it up and put it on buns with mayo and cheese and black olives and lettuce and…really whatever else you want. Then we put these on the plate next to ’em:

CHIPOTLE TWICE BAKED POTATO

Clean 6 medium baking potatoes. Pierce with fork 3 times on each side and place directly on rack in 375° oven. Bake until soft (about 1 hour). Remove from oven, let cool about 15 minutes. Carefully cut enough of top off to scoop out most of the meat, saving the shells. Put potato in large bowl.

4 ounces Velveeta, chunked
4 ounces Chipotle jack or cheddar cheese
1 tbsp Chipotle Tabasco sauce
4 ounces sour cream
salt and pepper to taste

Heat cheeses on top of potato for about 2 minutes in microwave. Add Tabasco, sour cream, and salt and pepper. Mash until well blended. Spoon potato mixture back into shells. Bake uncovered at 350° for 30 minutes. Serves 6

003 – POTTY TRAINING LOGIC

While hoping the Rocky Patel Prohibition San Andres doesn’t disappoint us, we talk about ignorant racists, a vivid dream, and Seth Beilski’s instability.

SPICY TEQUILA LIME CHILI

6 lbs sirloin tip, cubed, browned, and drained
2 lbs sage sausage, browned and drained
2 lg onions, chopped fine
6 med cloves garlic, minced
1 cup strong coffee
2-8oz can diced tomatoes
3 beef boullion cubes
1 small can finely chopped chipotle peppers in adobe sauce
1 square baker’s chocolate
14 ounces salsa verde
2-12oz bottles Mexican beer
1 ounce tequila
juice of 1 lime
1TB brown sugar, 1TB salt, 1tsppepper, 3TB liquid smoke, 4TB chili powder, 1TB cumin

Mix everything in large crockpot and cook on high for 4-6 hours or until beef is tender.

SUPER SIMPLE FISH TACO SAUCE

3tbsp balsamic mayo
1tsp cayenne pepper
1/4tsp chili powder
1/8tsp ground cumin
Mix well
